Katori 80 is brewed with organic

is a wine made with no inputs

and with three months on the lees in stainless

the grapes are pressed using a basket press in order to avoid crushing the stems and seeds and thereby avoiding unwanted tannins and flavours going into the wine

With a distinctive style that does not yield to trends

a village in the Southern Beaujolais just north of Lyon

yielding great intensity

It makes an excellent base for a modern cocktail

The larger skin-to-pulp ratio provides more aromas

and the beginning of Bellingham’s classic New World winemaking philosophy
