Depaz Rum Single Cask 2003 11 Years GinMade from the 2003 harvest, this rum is aged in oak cask for at least 11 years. Each bottle comes from a single cask selected by our Cellar Master. Tasting Notes: Nose: A rich rum with delicate, enchanting aromas. Palate: Head aromas: well balanced delicately oaked notes with hints of chocolate, spices, toasted dried fruit, coffee and vanilla. Heart aromas: offering up chocolate, rich cocoa, rose jam and old port. Base aromas: delicate jasmine

uses the finest distillates aged in charred American oak casks

of which 83 are under vine

I then further vapour infuse the peat smoke in the final stage of our distilling

A surprisingly textural wine

expressive and complex nose with notes of ripe white fruit

naturally sweet eaux-de-vie from the Fins Bois

along with other spices and citrus oils

candied citrus and soft spices such as star anise and cinnamon

The Ambra in it's title refers to it's wonderful rich amber colour and the Superior riserva

As soon as the wine is dry it is drained to barriques

The palate is concentrated and silky
