Gyuto 280mm sloyd-knifeThis long Gyuto is a collaboration between Steve from Rock Chop Knives Co and myself. I forged and handled the blade, Steve ground and polished the bevels. It feature a long blade, good distal taper, and thin tip. Flat profile with a slight curve toward the tip. The san mai is made from Shirogami 1 steel core with wrought iron cladding. Forged to shape and to geometry the blade is ground on water cooled grinding wheel with a 9 stones progression
