The grapes were

glyceric Malvasía

The juice was then slowly fermented by both native and specially selected yeast in a combination of new and twice used French oak barrels and small stainless steel drums

The wine is aged for eight months in used French barrels prior to bottling

it is wonderfully poised with great persistence on the fresh lime and Granny Smith-tinged finish
