Gyuto 270mm SheffieldThis Tetsu Gyuto feature a big and long blade, good distal taper, thin tip. Flat profile from the heel with a curve toward the tip. The San mai is laminated by myself in house. Forged to shape and to geometry the blade is ground on water cooled grinding wheel then finish by hand on bench stone. It's a big knife but I manage to keep the balance point at the pinch grip so it feel light in your hand. Specs : Name : Gyuto Year : March 2026 Construction :
