with bottling commencing once the wine meets the exacting quality requirements of the winemaking team

In the cellar : Once de-stemming

the juice is racked off from the sediment and moved into French oak barrels specially selected by Monsieur Christian Radoux

This whisky was matured in American oak casks for about half of its age and the rest in Pedro Ximénez sherry-seasoned casks

Weekly stirring (batonnage) of the lees ensures maximum flavours are released into the wine
