Marcy Size:WS - CaseThis lovely, bloomy rind cheese is inspired by a Saint Marcellin, a soft French cheese in the brie family. When young, it tastes bright and fresh; as it ages, it becomes more ripe, strong, and slightly gooey.

Our Applewood Smoked Cheddar cheese is the same English-style cheddar as our Field Day Cheddar

We add onions and chives to our Field Day to make this Cotswold-style cheddar

The result is a wonderful orange-hued pairing of smooth cheese and warm spice

we add a touch of smoked paprika and hickory-smoked sea salt

our gouda follows a traditional Dutch-style process

and we age it at least nine months for depth of flavor and medium sharpness

The fennel flavor adds just enough earthy
